Chicken with vegetables recipe
Recipe ingredients:
- 1 chicken cleaned and cut into 4 pieces
- 1/2 kg, 16 oz, carrots, cooked and cut into circles
- 1/2 kg, 16 oz, zucchini, cooked and cut into slices, lengthwise
- 1/2 cup canned mushrooms
- 1/4 cup cooked green peas
- 1 large onion, sliced
- 5 cloves garlic, crushed
- 1/4 cup vegetable oil and butter mixture
- 1/4 cup butter
- 1/2 cup lemon juice
- 4 cups water
- 1/2 tablespoon salt
- 1/2 teaspoon ground allspice
- 2 bay leaves
- Some chopped thyme leaves
Recipe method:
- Fry chicken pieces with oil and butter until golden.
- Remove and place aside.
- Fry garlic in half quantity of butter.
- Add lemon juice, salt, allspice, water, bay leaves and thyme.
- Bring to a boil on medium heat.
- Add chicken pieces.
- Cook on low heat for 45 minutes.
- Remove and place on a large platter.
- Reserve 2 cups of chicken stock to make chicken sauce.
- Fry cooked vegetables in remaining butter.
- Garnish chicken with vegetables.
- Serve hot accompanied with chicken sauce.
