Recipe for artichoke omelette
Slice 4 artichoke hearts and saute them in butter until they are half-cooked, without letting them brown. Add the artichoke slices to 8 eggs and beat together; cook the omelette as usual. It can be garnished with a row of sliced sauteed artichoke hearts and surrounded with a ribbon of reduced veal stock.
