Spicy banana fruit cake recipe in the cake category
Recipe ingredients:
- 3 1/2 cups sifted flour
- 4 teaspoons baking powder
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 2 teaspoons cinnamon
- 2 teaspoons ginger
- 1 teaspoon nutmeg
- 1 1/3 cups shortening
- 1 1/3 cups granulated sugar
- 4 eggs, beaten
- 2 cups mashed ripe banana
- 1 1/2 cups chopped nuts
- 1 cup raisins
- 4 cups diced candied fruits
Recipe method:
- Sift dry ingredients.
- Cream shortening.
- Gradually blend in sugar.
- Beat in eggs.
- Add flour mixture alternately with banana.
- Mix raisins, nuts and candied fruits into batter.
- Turn into two well greased and floured 9 inch loaf pans.
- Bake at 300 degrees F for 2 hours or until done.
