Hotsy totsy canned salsa recipe in the canning category
Recipe ingredients:
- 5 cups peeled and finely chopped tomatoes
- 1 cup finely chopped mild green chiles, about 4 medium Anaheim chiles
- 1/2 cup finely chopped yellow onion
- 1/2 cup finely chopped green onion
- 1/3 cup seeded and minced fresh jalapeno chiles, 4 to 5
- 1/2 cup white vinegar, 5 percent acidity
- 1 tablespoon minced garlic
- 2 to 3 teaspoons chopped fresh cilantro
- 1 teaspoon salt
- 2 teaspoons cumin powder
- 1 teaspoon Tabasco or other hot pepper sauce
- 1 teaspoon dried oregano leaves
Recipe method:
- Wash 5 half pint jars. Keep hot.
- Prepare lids as manufacturer directs.
- In a large pot place tomatoes, green chilies, onion, green onions, jalapeno chilies, vinegar, garlic, cilantro, salt, cumin, hot sauce and oregano.
- Bring the mixture to a boil and simmer for 5 minutes.
- Ladle hot salsa into 1 hot jar at a time, leaving 1/2 inch headspace.
- Wipe jar rim with a clean, damp cloth.
- Attach lid. Fill and close remaining jars.
- Process in a boiling water canner, 15 to 20 minutes.
