 Hotsy totsy canned salsa recipe in the canning category

 Recipe ingredients:

  • 5 cups peeled and finely chopped tomatoes
  • 1 cup finely chopped mild green chiles, about 4 medium Anaheim chiles
  • 1/2 cup finely chopped yellow onion
  • 1/2 cup finely chopped green onion
  • 1/3 cup seeded and minced fresh jalapeno chiles, 4 to 5
  • 1/2 cup white vinegar, 5 percent acidity
  • 1 tablespoon minced garlic
  • 2 to 3 teaspoons chopped fresh cilantro
  • 1 teaspoon salt
  • 2 teaspoons cumin powder
  • 1 teaspoon Tabasco or other hot pepper sauce
  • 1 teaspoon dried oregano leaves

 Recipe method:

  • Wash 5 half pint jars. Keep hot.
  • Prepare lids as manufacturer directs.
  • In a large pot place tomatoes, green chilies, onion, green onions, jalapeno chilies, vinegar, garlic, cilantro, salt, cumin, hot sauce and oregano.
  • Bring the mixture to a boil and simmer for 5 minutes.
  • Ladle hot salsa into 1 hot jar at a time, leaving 1/2 inch headspace.
  • Wipe jar rim with a clean, damp cloth.
  • Attach lid. Fill and close remaining jars.
  • Process in a boiling water canner, 15 to 20 minutes.
