<li>Heat Milnot and butter and add to beaten yolks.</li>

<li>Fold in beaten egg whites.</li>
<li>Bake in well buttered casserole placed in pan of hot water at 375 degrees F, about 40 to 50 minutes or until blade of knife comes out clean.</li>
<li>Garnish top with flowers made of extra cooked asparagus tips with pimento centers.</li>

<li>3 quarts water</li>
<li>2 teaspoons salt</li>
<li>3 cups hulled, whole grain, barley</li>
<li>1/4 cup butter</li>
<li>4 scallions</li>
<li>Salt and pepper, to taste</li>
</ul>
<p>&nbsp;<strong>Recipe method</strong>:</p>

<li>Put the water into a large 5 or 6 quart pot.</li>
<li>Add the salt and stir.</li>
<li>Bring the water to a boil and add the barley, stirring.</li>
<li>Turn the heat to medium so it is still boiling, but not fiercely. Cook for 45 minutes.</li>
<li>While the barley is cooking, put the butter in a small saucepan.</li>
<li>Turn the heat to medium-high and stir the butter as it melts.</li>
<li>When it has melted, tilt and tip the pan so the melted butter moves all around the bottom.</li>
<li>When the butter turns a rich caramel color, remove from the heat. It should be brown, but not dark brown. Set aside.</li>
<li>Place the scallions on a cutting board and trim off the root ends and 4 or 5 inches of the coarse green tops.</li>
<li>Finely chop the onions. Set aside.</li>
<li>When the barley has cooked for 45 minutes, check it for doneness by scooping out a few grains with a spoon and tasting them.</li>
<li>If the grains are chewy and tender, the barley is done. If the grains are still tough and firm, cook the barley for 15 minutes longer, then test again for doneness.</li>
<li>When done, pour the water and barley into a strainer.</li>
<li>Measure 3 cups of cooked barley and put into a serving bowl.</li>
<li>Let the remaining barley cool, then transfer to a container, cover tightly and refrigerate or freeze until needed.</li>
<li>Add the brown butter and scallions to the barley in the bowl, taste and add more salt and some pepper if needed.</li>
<li>Serve hot.</li>

<li>1/2 pound grated Cheddar cheese</li>
<li>1/2 pound grated Monterey jack cheese</li>
<li>1 cup sour cream</li>
<li>1/2 cup sliced pickled jalapenos</li>

<p>&nbsp;<strong>Recipe method</strong>:</p>
<ul style="margin-left: 3px; margin-right: 5px" class="lista">
<li>Heat the vegetable oil in a large saute pan over medium heat.</li>
<li>Add the onions, season with salt and cayenne.</li>
<li>Cook, stirring, until they begin to wilt, about 2 minutes.</li>
<li>Add the beef, chili powder, cumin, crushed red pepper and oregano.</li>
<li>Season with salt and cayenne and cook until all the pink in the meat disappears, 5 to 6 minutes.</li>
<li>Add the garlic, tomatoes, tomato paste and 2 1/2 cups beef stock.</li>
<li>Bring to boil and reduce the heat to medium-low.</li>
<li>Simmer, uncovered, until the meat is tender, about 1 hour, stirring occasionally.</li>
<li>Skim off any fat that rises to the surface.</li>
<li>Combine the Masa Harina with the remaining 1/2 cup stock and mix to blend.</li>
<li>Slowly add to the pot, stirring to blend. The mixture will thicken.</li>
<li>Cook for 30 minutes, then season again with salt and cayenne.</li>
<li>It should be thick enough to coat the back of a spoon.</li>
<li>In a heavy, deep pot or an electric fryer, heat 4 inches of vegetable oil to 360 degrees F.</li>
<li>Fry the shoestring potatoes in batches until golden brown, 3 to 4 minutes per batch.</li>
<li>Drain on paper towels, then season with salt and cayenne.</li>
<li>Preheat the oven to 400 degrees F.</li>
<li>Cover the bottom of a large, glass rectangular baking pan with the shoestring potatoes.</li>
<li>Combine the Cheddar and jack cheeses. Sprinkle the cheese over the fries.</li>
<li>Bake just until the cheese melts, 3 to 4 minutes.</li>
<li>Remove the pan from the oven and spoon the chili over the top of the fries.</li>
<li>Garnish with the sour cream and jalapenos. Serve immediately.</li>

<li>2 tablespoons dried tarragon</li>
<li>1/2 cup water or vegetable broth</li>
<li>1 cup grated low fat Jarlsberg cheese, 4 ounces</li>

<li>Minced fresh parsley, for garnish</li>

<li>In wok or large skillet with cover, heat olive oil over high heat until nearly smoking.</li>
<li>Stir fry garlic, leeks and chicken until golden brown and tender, about 5 minutes. Remove to a bowl.</li>

<li>Drain on paper towels and cut into quarters.</li>

<li>Chop the cabbage into bite size chunks.</li>
<li>In a large frying pan or a Dutch oven, add enough butter to cover the bottom and then some.</li>
<li>Fry the cabbage until it is tender, but not too mushy.</li>
<li>When done, put in a large bowl and hold for later in recipe.</li>
<li>Using the same fry pan or Dutch oven, fry ground beef until cooked.</li>
<li>In a saucepan, cook rice.</li>
<li>Mix meat and rice together adding salt, pepper, onion powder, garlic powder and some of the tomato sauce to moisten the mixture.</li>
<li>Cover the bottom of a 13 x 9 inch baking dish with about 1/4 inch tomato sauce, then layer cabbage, meat and rice mix and tomato sauce until pan is full.</li>
<li>Bake at 350 degrees F for about 45 minutes to 1 hour.</li>

<li>Preheat oven to 425 degrees F.</li>
<li>In a 2 quart casserole combine noodles, thyme and salt. Set aside.</li>
<li>Mix together the soup and milk in a saucepan and heat, stirring constantly, until smooth.</li>
<li>Add tuna, celery, green pepper, water chestnuts, scallions, mayonnaise and all but 2 tablespoons of the cheese.</li>
<li>Heat and stir until cheese is melted.</li>
<li>Add cheese sauce to casserole and mix thoroughly.</li>
<li>Sprinkle top with remaining grated cheese and almonds.</li>
<li>Bake for about 20 minutes until bubbly and lightly browned.</li>
