Recipe ingredients

• 1 tablespoon coriander seeds
• 2 tablespoons cumin seeds
• 1 teaspoon ajwain (thymol) seeds
• 2 to 3 whole dry red chillies
• 1 tablespoon black salt crystals
• 1/2 teaspoon citric acid
• 1 tablespoon dry mango powder (amchoor)
• 1 tablespoon salt
• 2 teaspoons garam masala
• 1 teaspoon white/black pepper, optional

How to make chat masala (powder)

• Roast the first 3 ingredients seperately and powder them with the chillies, black salt and citric acid.
• Mix in the remaining ingredients.
• Store in an airtight container.
• Will keep well for months.
