Sookha aloo (dry potatoes)
Sookha aloo (dry potatoes) recipe in the curry category
Recipe ingredients:
- 4 medium size potatoes
- 2 teaspoons cumin seeds
- 1 teaspoon salt
- 2 teaspoons mango powder
- 1/4 teaspoon hot pepper
- 2 teaspoons garam masala
- Oil, to fill pan to 2 inches
Recipe method:
- Boil potatoes until cooked but not overdone.
- Peel and cut into 1/2 inch cubes.
- Heat oil very hot, add and brown cumin seeds.
- Add potatoes and fry until they are golden brown.
- Add the remaining ingredients and fry for 2 to 3 minutes or more.
- Remove from oil with a slotted spoon.
- Serve hot.
- Use enough oil so that the potatoes will not need to be stirred often. This avoids breaking them up.
