Vegetable jalfrezi recipe



Recipe for vegetable jalfrezi in our easy curry recipes collection.

Recipe ingredients

  • 3 cups mixed boiled vegetables
  • 2 onions
  • 3 spring onions
  • 2 tomatoes
  • 4 green chilies
  • 1 teaspoon ginger
  • 1 tablespoon coriander
  • 1/2 tea cup tomato ketchup
  • 1 teaspoon chili powder
  • 1 tablespoon sugar
  • 3 tablespoons oil, or butter
  • Salt according to taste

How to make vegetable jalfrezi

  • Chop the onions and spring onions with leaves, tomatoes, green chilies, ginger and coriander.
  • Separately heat ghee, clarified butter, in a vessel and fry onions till golden brown.
  • Add tomatoes, chilies, ginger and coriander. Fry for 2 to 3 minutes.
  • Add tomato ketchup, boil vegetables, spring onions, chili powder, sugar, salt and little water.
  • Cook for 5 to 10 minutes. Serve hot.
