Frittata O Brien


 Frittata O Brien recipe in the egg category

 Recipe ingredients:

  • 1 tablespoon butter
  • 1 1/2 cups frozen potatoes O’Brien, about 6 to 7 ounces
  • 1/4 teaspoon salt, if desired
  • 4 eggs
  • 1/4 cup water
  • 1/4 cup, 1 ounce, shredded Cheddar, American or Monterey
  • Jack cheese

 Recipe method:

  • Preheat broiler.
  • Wrap handle of 10 inch omelet pan or skillet with foil to make it ovenproof.
  • In skillet over medium heat, heat butter until just hot enough to sizzle a drop of water.
  • Add potatoes and season with salt, if desired.
  • Stir occasionally until lightly browned, about 5 to 7 minutes.
  • In small bowl, beat together eggs and water until blended.
  • Pour over potatoes.
  • Cover and cook until eggs are almost set, 4 to 5 minutes.
  • Sprinkle with cheese.
  • Broil about 6 inches from heat until eggs are completely set and cheese melts, about 2 to 3 minutes.
  • Cut into halves to serve.
