Frittata O Brien
Frittata O Brien recipe in the egg category
Recipe ingredients:
- 1 tablespoon butter
- 1 1/2 cups frozen potatoes O’Brien, about 6 to 7 ounces
- 1/4 teaspoon salt, if desired
- 4 eggs
- 1/4 cup water
- 1/4 cup, 1 ounce, shredded Cheddar, American or Monterey
- Jack cheese
Recipe method:
- Preheat broiler.
- Wrap handle of 10 inch omelet pan or skillet with foil to make it ovenproof.
- In skillet over medium heat, heat butter until just hot enough to sizzle a drop of water.
- Add potatoes and season with salt, if desired.
- Stir occasionally until lightly browned, about 5 to 7 minutes.
- In small bowl, beat together eggs and water until blended.
- Pour over potatoes.
- Cover and cook until eggs are almost set, 4 to 5 minutes.
- Sprinkle with cheese.
- Broil about 6 inches from heat until eggs are completely set and cheese melts, about 2 to 3 minutes.
- Cut into halves to serve.
