Chitterlings (chitlins)
Chitterlings (chitlins) recipe in the pork category
Recipe ingredients:
- 1, 5 pound, bucket chitterlings
- 1 to 2 tablespoons salt
- 1/4 teaspoon ground red pepper
- 2 eggs, slightly beaten
- 2 tablespoons flour
- 1, 5 1/4 ounces, can evaporated milk
Recipe method:
- Place chitterlings in Dutch oven and add enough water to cover.
- Add salt and red pepper and mix.
- Cover and cook over medium heat for 1 hour or until fork tender. Drain well.
- Mix together the eggs, flour and evaporated milk to make batter.
- Dip chitterlings in batter to coat and fry in hot oil in large skillet to brown, turning once.
- Serve hot.
