Corn croquettes recipe



Recipe for corn croquettes in our easy vegetarian recipes collection.

Recipe ingredients

  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1 cup milk
  • Salt and freshly ground black pepper
  • 1 to 2 tablespoons finely chopped parsley
  • 2 cups corn kernels, cooked
  • 2 egg yolks
  • Coating:
    • 2 eggs, beaten
    • Seasoned flour
    • Fine stale breadcrumbs
    • Oil for frying

How to make corn croquettes

  • To make the sauce, cut the butter into small pieces and melt in a heavy-bottomed pan.
  • Stir in the flour and cook for a few minutes unto the mixture is a pale gold.
  • Remove from the heat and pour in the milk.
  • Stir well, return to the heat and stir until the sauce has thickened.
  • Season with salt and plenty of pepper.
  • Stir the parsley, corn kernels and egg yolks into the mixture. Chill.
  • The mixture should have a heavy dropping consistency.
  • Form it into croquettes.
  • Dip each in the beaten egg, then roll in the flour and breadcrumbs.
  • Fry the croquettes in oil until crisp.
