Cranberry ginger bars recipe



Recipe for cranberry ginger bars in our easy vegetarian recipes collection.

Recipe ingredients

  • Filling:
    • 3 cups of fresh or frozen cranberries
    • 3/4 cups each of raisins, dried apricots and crystallised ginger
    • 1 pound of mixed dried fruit of your choice
    • 1 cup brown sugar
    • 1 cup apple juice
  • Base and topping:
    • 2 cups flour
    • 3/4 cups brown sugar
    • 1 1/2 teaspoons of ground ginger
    • 1/4 teaspoon of salt
    • 1 cup of margarine or vegetable shortening
    • 1 cup of rolled oats
    • 3/4 cup of raw sunflower seeds

How to make cranberry ginger bars

  • Filling:
    • In a large saucepan combine all ingredients.
    • Bring to a gentle boil over a medium heat.
    • Stir for about 5 minutes or until the cranberries have popped.
    • Let cool.
  • Base and topping:
    • Mix all ingredients together.
    • Set aside 1 and a half cups of crumb mixture for topping.
    • Press the remainder into a 9 x 13 inch baking pan.
    • Bake at 350 degrees F for 15 minutes.
    • Spread with cranberry mixture and sprinkle with remaining crumbs.
    • Bake for another 30 minutes.
