Green mayonnaise recipe
Recipe for green mayonnaise in the vegetarian recipes category.
Recipe ingredients:
- 3 tablespoons chopped fresh spinach
- 3 tablespoons chopped watercress
- 3 tablespoons chopped spring onion
- 3 tablespoons chopped parsley
- 1 cup mayonnaise
- 1/2 teaspoon grated nutmeg
- Salt to taste
Recipe method:
- Put the spinach, watercress, spring onion and parsley in a small saucepan.
- Add water to cover them.
- Quickly bring to the boil.
- Remove the saucepan from the heat.
- Let stand for 1 minute.
- Drain the greens well.
- Rub them through a sieve or purse them in a blender.
- Drain off excess liquid.
- Put the mayonnaise in a blender or medium sized bowl.
- Add the purse, nutmeg and salt to taste.
- Blend until evenly mixed.
