Haricot bean salad
Haricot bean salad recipe in the vegetarian category
Recipe ingredients:
- 1 cup dried haricot beans, soaked overnight
- 2 cloves garlic, crushed
- 2 tablespoons wine vinegar
- 2 tablespoons olive oil
- 1 teaspoon French mustard
- Salt and freshly ground black pepper
- 1 red pepper, seeded and thinly sliced
- 1 leek, thinly sliced
- 2 spring onions, green and white parts chopped separately
Recipe method:
- Place the beans in a large saucepan and coker with fresh water.
- Bring to the boil and boil fast for 10 minutes.
- Cover and simmer for 40 to 50 minutes or until tender. Drain.
- Combine the garlic, vinegar, olive oil, mustard and seasoning in a screw top jar.
- Seal and shake well.
- Pour over the hot beans and leave to cool.
- Stir in the pepper, leek and white parts of the spring onions.
- Place in a serving dish.
- Sprinkle with green chopped onions and serve.
