Kidney bean, artichoke and mushroom casserole
Kidney bean, artichoke and mushroom casserole recipe in the vegetarian category
Recipe ingredients:
- 1 cup kidney beans
- 1 to 2 tablespoons oil
- 1 large onion, chopped
- 1 to 2 cloves garlic, chopped
- 3 cups mushrooms, sliced
- 1 cup French beans, trimmed, cut in thirds and parboiled
- 1 3/4 cups can artichoke hearts, drained
- 1 3/4 cups can tomatoes, mashed
- Salt and freshly ground black pepper
- Parsley
Recipe method:
- Soak the kidney beans overnight and cook until tender.
- Preheat the oven to 350 degrees F.
- Heat oil and fry onion and garlic until translucent.
- Add the mushrooms and stir-fry for 1 to 2 minutes until just soft.
- Transfer all the ingredients to a casserole.
- Season well.
- Cover and bake for 35 to 40 minutes.
- Sprinkle with parsley and serve.
