Kidney bean, artichoke and mushroom casserole


 Kidney bean, artichoke and mushroom casserole recipe in the vegetarian category

 Recipe ingredients:

  • 1 cup kidney beans
  • 1 to 2 tablespoons oil
  • 1 large onion, chopped
  • 1 to 2 cloves garlic, chopped
  • 3 cups mushrooms, sliced
  • 1 cup French beans, trimmed, cut in thirds and parboiled
  • 1 3/4 cups can artichoke hearts, drained
  • 1 3/4 cups can tomatoes, mashed
  • Salt and freshly ground black pepper
  • Parsley

 Recipe method:

  • Soak the kidney beans overnight and cook until tender.
  • Preheat the oven to 350 degrees F.
  • Heat oil and fry onion and garlic until translucent.
  • Add the mushrooms and stir-fry for 1 to 2 minutes until just soft.
  • Transfer all the ingredients to a casserole.
  • Season well.
  • Cover and bake for 35 to 40 minutes.
  • Sprinkle with parsley and serve.
