Potato topped vegetable pie recipe

Recipe ingredients

  • 1/2 cup green lentils
  • 1/4 cup pot barley
  • 1 onion, chopped
  • 1, 15 ounces, can chopped tomatoes
  • 6 ounces cauliflower florets
  • 2 stalks celery, sliced
  • 1 leek, thickly sliced
  • 1 turnip, sliced
  • 2 carrots, diced
  • 2 tablespoons fresh mixed herbs, chopped
  • 1 1/2 pounds potatoes, scrubbed
  • 3 tablespoons semi-skimmed milk
  • 2 tablespoons grated reduced fat
  • Salt and freshly ground black pepper
  • Medium hard cheese

How to make potato topped vegetable pie

  • Place the lentils, barley, onion, tomatoes, cauliflower, celery, leek, turnip, carrots and herbs in a large saucepan with 1 1/4 cups water.
  • Bring to the boil, cover and simmer for 40 to 45 minutes or until everything is soft.
  • Cover potatoes with boiling water and cook for about 15 minutes or until soft.
  • Drain, peel and mash the potatoes with the milk and season to taste.
  • Place the lentil mix in a pie dish and either pipe or fork the potato on top.
  • Sprinkle with cheese and place in a preheated oven at 400 degrees F for 30 to 35 minutes.
