Roasted aubergine recipe
Recipe ingredients:
- 1 large aubergine
- 1 small onion, finely chopped
- 1 to 2 green chillis, finely chopped
- 1/2 teaspoon salt
- 2 to 3 tablespoons mustard oil
Recipe method:
- Place the aubergine under a preheated grill for about 15 minutes, turning frequently, until the skin becomes black and the flesh soft.
- Peel the skin and mash the flesh.
- Add the rest of the ingredients to the mashed aubergine and mix thoroughly.
