Spinach balls recipe
Recipe ingredients:
- 2, 10 ounces, packages frozen chopped spinach, thawed
- 1 package Stove-Top stuffing, mixed to package directions
- 1 cup Parmesan cheese
- Dash nutmeg
- 6 eggs, beaten
- 1/3 cup melted butter
- Mustard sauce:
- 1/3 cup dry mustard
- 1/2 cup vinegar
- 1/2 cup sugar
- 1 egg yolk
Recipe method:
- Mix all ingredients together.
- Form into walnut sized balls.
- Place on lightly greased cookie sheet.
- Bake 400 degrees F for 10 to 15 minutes until firm.
- 20 balls can be microwaved on medium-high for 5 minutes.
- Serve with mustard sauce.
- The spinach balls may be frozen either before or after baking.
- Mustard sauce:
- Combine all ingredients in saucepan and simmer until slightly thickened.
- Can be covered and stored in refrigerator for up to a month.
