Chocolate zucchini snack cake


 Chocolate zucchini snack cake recipe in the zucchini category

 Recipe ingredients:

  • 2 1/4 cups all-purpose flour
  • 1 1/2 cups sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup buttermilk
  • 1/2 cup unsweetened applesauce
  • 1 tablespoon oil
  • 1 teaspoon vanilla extract
  • 4 egg whites
  • 2 cups grated unpeeled zucchini
  • 2/3 cup minichocolate chips
  • 1/2 cup chopped walnuts

 Recipe method:

  • Preheat the oven to 325 degrees F.
  • Lightly coat a 9 x 13 inch baking pan with non stick vegetable oil spray.
  • In a large bowl, combine the flour, sugar, cocoa, baking soda and salt.
  • In a medium bowl, combine the buttermilk, applesauce, oil and vanilla.
  • In another large bowl, beat the egg whites with an electric mixer on high speed for 1 minute.
  • Add buttermilk mixture and beat until blended.
  • Combine egg white mixture and flour mixture and beat until blended.
  • Mix in the grated zucchini and 1/3 cup of the chocolate chips.
  • Pour the batter into the prepared pan.
  • Sprinkle the remaining chocolate chips and the nuts over the batter.
  • Bake about 50 minutes or until a toothpick inserted near the center comes out clean.
  • Let the cake cool completely, in a pan, on a wire rack.
