Chocolate zucchini snack cake recipe in the zucchini category
Recipe ingredients:
- 2 1/4 cups all-purpose flour
- 1 1/2 cups sugar
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup buttermilk
- 1/2 cup unsweetened applesauce
- 1 tablespoon oil
- 1 teaspoon vanilla extract
- 4 egg whites
- 2 cups grated unpeeled zucchini
- 2/3 cup minichocolate chips
- 1/2 cup chopped walnuts
Recipe method:
- Preheat the oven to 325 degrees F.
- Lightly coat a 9 x 13 inch baking pan with non stick vegetable oil spray.
- In a large bowl, combine the flour, sugar, cocoa, baking soda and salt.
- In a medium bowl, combine the buttermilk, applesauce, oil and vanilla.
- In another large bowl, beat the egg whites with an electric mixer on high speed for 1 minute.
- Add buttermilk mixture and beat until blended.
- Combine egg white mixture and flour mixture and beat until blended.
- Mix in the grated zucchini and 1/3 cup of the chocolate chips.
- Pour the batter into the prepared pan.
- Sprinkle the remaining chocolate chips and the nuts over the batter.
- Bake about 50 minutes or until a toothpick inserted near the center comes out clean.
- Let the cake cool completely, in a pan, on a wire rack.
