Creamy zucchini soup
Creamy zucchini soup recipe in the zucchini category
Recipe ingredients:
- 2 medium onions, chopped
- 6 tablespoons butter
- 8 cups zucchini, sliced
- 2 cups water or chicken broth
- 2 cans cream of chicken soup, 10 ounces each
- 2 cups milk
- 2 cups half-and-half
- 2 tablespoons chopped fresh basil
- Salt and pepper, to taste
Recipe method:
- Saute the onions in the butter in a large saucepan until tender.
- Add the zucchini and water.
- Simmer for 30 minutes, stirring occasionally.
- Pour into a food processor container.
- Process until smooth.
- Pour into the saucepan.
- Stir in the chicken soup, milk, half-and-half, basil, salt and pepper.
- Cook over very low heat until heated through, stirring constantly.
- Ladle into soup bowls.
