Creamy zucchini soup


 Creamy zucchini soup recipe in the zucchini category

 Recipe ingredients:

  • 2 medium onions, chopped
  • 6 tablespoons butter
  • 8 cups zucchini, sliced
  • 2 cups water or chicken broth
  • 2 cans cream of chicken soup, 10 ounces each
  • 2 cups milk
  • 2 cups half-and-half
  • 2 tablespoons chopped fresh basil
  • Salt and pepper, to taste

 Recipe method:

  • Saute the onions in the butter in a large saucepan until tender.
  • Add the zucchini and water.
  • Simmer for 30 minutes, stirring occasionally.
  • Pour into a food processor container.
  • Process until smooth.
  • Pour into the saucepan.
  • Stir in the chicken soup, milk, half-and-half, basil, salt and pepper.
  • Cook over very low heat until heated through, stirring constantly.
  • Ladle into soup bowls.
