Mexican zucchini
Mexican zucchini recipe in the zucchini category
Recipe ingredients:
- 2 to 3 tablespoons butter or oil
- 1 medium onion, chopped
- 1 to 2 garlic cloves, minced
- 1/4 cup tomato puree
- 1/4 cup chicken broth
- 2 cups zucchini
- 3 ears fresh corn
- 1 cup cheese, Cheddar or Monterey Jack
- Salt and pepper to taste
Recipe method:
- Cover the bottom of a skillet with oil or butter.
- Saute onions and garlic until tender and transparent.
- Add tomato pure, corn, water and broth.
- Simmer for a few minutes.
- Add zucchini, cover and simmer for 8 to 10 minutes.
- Uncover and stir.
- Salt and pepper to taste.
- Transfer to a serving dish.
- Top with cheese.
