Zucchini nut muffins
Zucchini nut muffins recipe in the zucchini category
Recipe ingredients:
- 3 eggs
- 1 cup corn oil
- 1 tablespoon vanilla
- 2 cups zucchini, unpeeled and shredded
- 2 cups sugar
- 2 cups flour, unsifted
- 1 tablespoon cinnamon
- 1 1/2 teaspoon baking soda
- 1 1/2 teaspoon salt
- 1/4 teaspoon baking powder
- 1 cup nuts, chopped
Recipe method:
- Preheat oven to 400 degrees F.
- Combine eggs, oil, vanilla and zucchini.
- Add remaining ingredients and stir until moistened.
- Grease muffin tins and fill 2/3 full.
- Bake for 20 minutes.
