Pickled zucchini


 Pickled zucchini recipe in the zucchini category

 Recipe ingredients:

  • 4 medium size zucchini, about 8 ounces each
  • 1 large onion
  • 2 cups sugar
  • 2 cups distilled white vinegar
  • 2 tablespoons pickling spice
  • 4 bay leaves

 Recipe method:

  • Cut zucchini into 1 inch chunks.
  • Thinly slice onion.
  • In 2 quart saucepan over high heat, heat sugar, vinegar, pickling spice and bay leaves to boiling.
  • Add sliced onion.
  • Cook 1 minute.
  • Place zucchini in 11 x 7 inch glass baking dish.
  • Pour vinegar mixture over zucchini.
  • Cover with plastic wrap and refrigerate overnight to allow flavors to develop, stirring occasionally.
  • Drain before serving.
  • Serve with grilled steak or chicken, or hamburgers.
  • If you like, store in decorative jars in the refrigerator.
