Pickled zucchini
Pickled zucchini recipe in the zucchini category
Recipe ingredients:
- 4 medium size zucchini, about 8 ounces each
- 1 large onion
- 2 cups sugar
- 2 cups distilled white vinegar
- 2 tablespoons pickling spice
- 4 bay leaves
Recipe method:
- Cut zucchini into 1 inch chunks.
- Thinly slice onion.
- In 2 quart saucepan over high heat, heat sugar, vinegar, pickling spice and bay leaves to boiling.
- Add sliced onion.
- Cook 1 minute.
- Place zucchini in 11 x 7 inch glass baking dish.
- Pour vinegar mixture over zucchini.
- Cover with plastic wrap and refrigerate overnight to allow flavors to develop, stirring occasionally.
- Drain before serving.
- Serve with grilled steak or chicken, or hamburgers.
- If you like, store in decorative jars in the refrigerator.
