Zucchini rice pilaf
Zucchini rice pilaf recipe in the zucchini category
Recipe ingredients:
- 2 teaspoons vegetable oil
- 1 onion, chopped
- 1 cup long grain rice
- 2 cups vegetable stock or water
- 2 cups grated zucchini
Recipe method:
- In heavy saucepan, heat oil over medium-high heat.
- Cook onion, stirring occasionally, for about 3 minutes or until softened.
- Add rice. Cook, stirring, for 1 minute.
- Add stock or water. Bring to boil.
- Reduce heat to low. Cover and simmer for 20 minutes.
- With fork, stir in 2 cups zucchini.
- Cook, covered, for 5 minutes or until zucchini and rice are tender and liquid is absorbed.
