Sauteed zucchini with tomatoes and anaheim chile


 Sauteed zucchini with tomatoes and anaheim chile recipe in the zucchini category

 Recipe ingredients:

  • 2 tablespoons olive oil
  • 1 small white onion, sliced
  • 1 clove garlic, minced
  • 3 medium zucchini, sliced
  • 1 large red bell pepper, chopped
  • 2 medium tomatoes, peeled and chopped
  • 4 anaheim chiles, roast, peel, seed and chop
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon crushed dried oregano
  • 1 tablespoon chopped fresh parsley
  • 1/4 cup crumbled feta cheese

 Recipe method:

  • Heat the oil in large saute pan.
  • Add the onion, garlic, zucchini and bell pepper.
  • Saute for 4 to 5 minutes.
  • Add the tomatoes, chile, salt, pepper, oregano and parsley.
  • Cover the pan and simmer for 6 to 7 minutes or until the zucchini is tender.
  • Serve topped with a small amount of feta cheese crumbled over each serving.
  • This is a smashing summer dish served with very thin slices of roast pork. To add an extra splash of color, spoon the zucchini, tomatoes, and chile mixture into a radicchio leaf.
