Zucchini and sugar snap peas
Zucchini and sugar snap peas recipe in the zucchini category
Recipe ingredients:
- 1 tablespoon vegetable oil
- 3 small zucchini, about 8 ounces each, cut into 1 1/2 inch chunks
- 1/2 pound sugar snap peas, stem and strings removed along both edges of each pea pod
- 2 green onions, cut into 1/2 inch pieces
- 1 tablespoon chopped fresh oregano or 1/2 teaspoon dried oregano leaves
- 3/4 teaspoon salt
- 1/4 teaspoon coarsely ground black pepper
Recipe method:
- In nonstick 12 inch skillet over medium-high heat, in hot vegetable oil, add zucchini, snap peas, green onions, oregano, salt and pepper.
- Cook 8 to 10 minutes, stirring frequently, until vegetables are golden and tender crisp.
